Seymour, MO. – For anyone that knows about beef breeds and beef quality, their ears might perk to hear that, in our corner of the Ozarks, an eatery will be opening in Seymour that features Wagyu beef as a central ingredient.
The business is called Kobe Club, and is owned by Will Neal. We spoke to the owner while the building was under construction in late June, to ask about how they get their supply of beef, what their plans are, and even how they’ll expand if good business follows through. Listen below for more.
To outline, Neal owns and operates his own Wagyu herd, a beef processing plant in the Seymour area, and now an in-construction restaurant in the same town. The idea is that while Wagyu steaks, which can sell in stores for hundreds of dollars, have a large buying audience, the hamburger doesn’t have as much of a market despite still being of high quality.
To bridge this gap, Kobe Club will offer that same hamburger while maintaining prices that shouldn’t weigh heavier than eating out elsewhere.
Lastly, in the event the business succeeds and leads to expansion, Will Neal said that his eyes are set on West Plains as the next likely point of focus.
The restaurant is expected to open within the next couple of months.
